Nut-cake with dried figs

Ingredients

1 cup of grated dry bread toasts

½ cup of farina

2 teaspoonfuls of cinnamon

2 teaspoonfuls of baking powder

10 eggs 1 cup of sugar

1 cup of roughly milled nuts

2 cups of dried figs, chopped into small pieces

Olive oil for the baking pan

For the syrup

1 tea cup of sugar

2 teacups of water

½ small glass of cognac

½ glass of nuts, cut in the middle

Εxecution

Mix dry toast, flour, cinnamon and baking powder. Scramble eggs with sugar in the mixer for about 15 minutes. Stop scrambling and mix the flour mixture into the mixture of eggs.

Add nuts and half the portion of figs. Spread oil on the baking pan and pour the mixture inside it. Preheat oven to 160 ºC and bake for 45 minutes.

Prepare the syrup:

let it boil for about 7 minutes, and, finally, add the cognac. As soon the nut-cake chills pour half of the syrup over it, while it is still warm.

Add the rest of the figs into the rest of the syrup. Lower fire and let figs soften and soak in honey.

If necessary, add a little bit of warm water. Remove the nut-cake from the baking pan, pour over it the rest of the syrup of figs and decorate with walnuts.
